Ingredients
For marination
- 400 gm chicken boneless
- ½ tsp white pepper powder
- ½ tsp ginger garlic paste
- ½ tsp salt
- 1 egg
- 2 tbsp cornstarch powder
For sauce
- 2 tbsp oyster sauce
- 1 tbsp soy sauce (dark)
- 1 tbsp red chili sauce
- 1 tbsp vinegar
For frying
- 1 tbsp garlic chopped
- 3 red chilies
- ½ cup cashews roasted
- ½ cup onions chopped
- 1 cup red, yellow and green capsicum julienne
- 2 tbsp green onions whites
- 1 tsp red chili paste
- ¼ salt
- 1 tbsp honey
- 1 tbsp green onions chopped
Instructions
- Make long strips of boneless chicken. In a mixing bowl, add 400 gm of chicken strips, ½ tsp white pepper powder, ½ tsp ginger garlic paste, ½ tsp salt, 2 tbsp cornstarch, and 1 egg. Mix everything well and let the chicken marinate for 30 min.
- Combine 2 tbsp oyster sauce, 1 tbsp soy sauce, 1 tbsp red chili sauce, and 1 tbsp vinegar in a small bowl. Mix it well and keep it aside.
- Heat enough oil in a pan to fry the chicken on medium-high heat. Once the oil is hot, add the marinated chicken in batches to the pan. Fry for 4-5 min. Keep turning the chicken pieces to cook them from all sides.
- Heat 2 tbsp oil in a separate pan or wok. Fry ½ cup cashew for 3 min. Remove them from the pan.
- Add 1 tbsp chopped garlic and 3 dry red chilies and sauté for 30 sec.
- Add ½ cup onion and fry for 1 min. Next add 1 cup red, yellow and green capsicum julienne. Add 2 tbsp green onions whites and sauté for 1 min.
- Add 1 tsp red chili paste and mix well. Cook for 30 seconds. Add ¼ tsp of salt and mix well.
- Add mixed sauces in pan and mix well with veggies. Then add fried chicken in it. Mix it well with the sauce. The chicken should be coated well with the sauce. Then add the fried cashew nuts. Mix everything well.
- Add a bit of water if sauce is too thick and mix well. Cook the chicken on medium-high heat.
- Add 1 tbsp honey and chopped green onions and mix well with chicken.
- Cook chicken well until sauce thickens.
- Serve the dish hot with noodles, fried rice, or white rice.
Notes
- Let the chicken marinate for a longer time if possible.
- Use homemade red chili paste.
- You can use chicken breast or thigh part for this recipe.
