Ingredients
- 450 gm chicken, minced
- 2 tsp olive oil
For marination
- ½ cup onions, finely chopped
- 1 tsp garlic, finely chopped
- 4 tbsp coriander leaves, chopped
- ½ cup bread crumbs
- 1 tsp red chili powder
- 1 tsp coriander powder
- ½ tsp cumin powder
- ½ tsp black pepper powder
- ½ tsp garam masala
- ¼ tsp cardamom powder
- ¼ tsp cinnamon powder
- ½ tsp salt
- 1 tbsp olive oil
Instructions
- Take minced chicken in a mixing bowl. Add finely chopped onions, garlic, and coriander leaves.
- Add bread crumbs, red chili powder, coriander powder, cumin powder, and black pepper powder. Then add garam masala, cardamom powder, cinnamon powder, salt, and olive oil. Mix everything with minced chicken to combine well.
- Cover it and keep it in the refrigerator for 20 min. Meanwhile, soak wooden skewers in water for 30 min.
- Use your hand and start to stick the chicken mixture around the skewers. Make thick and long sausage like shape.
- Spread and heat 2 tsp olive oil on a grill pan for 2-3 min on medium high heat.
- Gently place 3-4 kebab skewers in a grill pan, depending on the size of the pan. Do not overcrowd the pan.
- Cook the kebab for 4-5 min on each side. Cook until you get a golden brown and a bit of charred surface on the kebab. Repeat the same process for the remaining kebabs.
- Serve hot chicken kofta kebab with salad, lemon wedges, and your favorite sauces.
Notes
- Don’t forget to soak the wooden skewers, as it prevents them from burning while cooking.
- Wet your hands with a little oil or water before setting kebabs on skewers. This will help you to avoid the mixture sticking to your hands.
- You can use metal skewers instead of wooden skewers.
- Rotate skewers to each side to cook evenly.
